- De la cebolla, 3/4 la picamos finamente, el otro 1/4 lo fileteamos
- Picamos el epazote, no tan fino, no tan grueso
- El ajo lo picamos finamente
- En una cacerola grande ponemos a calentar el aceite y la mantequilla, bajamos el fuego y acitronamos el ajo cuidando que no se queme
- Ya que este el ajo, añadimos la cebolla picada (la fileteada la reservamos)
- Ya que también este la cebolla acitronada, añadimos los champiñones, un poco de sal, la mitad del epazote y la cebolla fileteada
- Bajamos el fuego, tapamos y dejamos que los hongos "suelten" el agua, los dejamos durante 7-10 minutos y les damos una vuelta
- Dejamos durante otros 20-25 minutos, (dándoles una vuelta cada 5 minutos) cuando ya casi se consuma el agua (ya estarán casi cocidos), añadimos el resto de epazote, y si gusta otro tanto de mantequilla, rectificamos de sal, dejamos otros 4 minutos........y listo !!!!...... a disfrutar!!!
