  10. 1/2 pieza Cebolla mediana
  11. 3 dientes Ajo medianos
  12. 1 rama Epazote
  13. 1 hoja Laurel
  14. Al gusto Orégano molido
  15. Al gusto Sal de grano
  16. 1 cubo Consome de Pollo
  17. ----- Para el momento de servir:
  18. 1 pieza Cebolla mediana picada
  19. Al gusto Orégano molido
  20. Al gusto Jugo de Limón

  1. Con un paño de tela limpio y húmedo, quitarle la tierra que pudieran tener las setas.
  2. En una cacerola vaciar un poco de aceite de olivo y agregar la cebolla y el ajo picados. Dejar que se acitrone la cebolla.
  3. Desmenuzar las setas en trozos medianos y agregarlas en la cacerola con la cebolla y el ajo. Mover constantemente para que todas las setas se frían un poco con el aceite. Agregar agua hasta que cubra un poco más de la mitad de las cetas. Agregar los garbanzos precocidos. Sazonar con un poco de sal de grano. Tapar la cacerola y dejarlas a fuego alto para que hierva y para que se cosan los garbanzos.
  4. A parte, quitar los rabos de los chiles y en un comal bien caliente tatemarlos (asarlos) junto con la media cebolla y los dientes de ajo. Dejar los chiles hasta que tomen un color mas obscuro (no dejarlos quemar porque si no saben amargos). Retirar la cebolla y los ajos hasta que estén un poco quemados (para que den un mejor sabor).
  5. Poner los chiles en una cacerola con suficiente agua para que se ablanden. Retirarlos del fuego antes de que hiervan. Licuar los chiles junto con la cebolla y los ajos tatemados, una cucharada de sal de grano y un poco del agua de los chiles. Vaciar la salsa en el agua sobrante de los chiles. Revolver bien.
  6. Agregar la salsa sobre el caldo de setas pasándola por un colador primero para retirar las semillas de los chiles. Revolver hasta que se incorpore bien el caldo con la salsa. Agregar la rama entera de epazote, la hoja de laurel, un poco de orégano molido y el cubo de consomé de pollo. Sazonar con sal de grano. Tapar la cacerola y dejar hervir a fuego medio por 10 minutos.
  7. Retirar del fuego. Retirar del caldo la rama de epazote y la hoja de laurel.
  8. Servir en un plato hondo con la cebolla picada, orégano y jugo de limón al gusto. Puede acompañarse con tortillas tostaditas recién salidas del comal o con bolillo. 😃
